Chef Roland Veldhuijzen

Classic, pure and seasonal

This down-to-earth Frisian was born on 14 July 1964 in Heerenveen, and his love of cooking showed early. After culinary school he gained experience at renowned establishments such as 'De Wanne' in Ootmarsum and 'Het Jagertje' in Langweer, and later under Lucas Rive at 'De Bokkedoorns' and André van Doorn at the 'Hoefslag'.

In 2003 he became head chef at 'Chapeau' in Haarlem, where Michelin awarded him a star in his very first year. Since April 2006 he has run the kitchen at Tante Koosje, and under him the restaurant has kept the Michelin star it first earned in 2005 every year since, now 21 years running. His style is pure: classic with modern touches. He considers sauces essential, always made from the bones of the product he serves, and cooks consciously with the seasons.
